  1. 1 1/3 lbsbeef short ribs (about 600 grams)
  2. 7 ozOaxaca cheese or quesillo (about 200 grams)
  3. Nacho sauce, to taste
  4. Tortilla chips, to taste
  5. 1/3medium onion
  6. 2jalapeño peppers
  7. 2Roma tomatoes
  8. Garlic salt, to taste
  9. Black pepper, to taste
  10. Salt, to taste
  11. 1 canlight beer
  12. 1 tablespoonolive oil

    Season the short ribs with garlic salt and black pepper to taste. Fry for 7 minutes on each side, then add the beer and simmer on low heat until the liquid reduces.

    While the ribs are cooking, slice the onion and jalapeños into thin strips. Sauté them in a skillet over medium heat with salt to taste and 1 tablespoon of olive oil.

    When the onion is cooked and turns translucent, add the chopped cheese and tomatoes. I removed the tomato pulp for texture and presentation, but that's optional.

    When the Oaxaca cheese starts to melt, add enough nacho sauce to make the mixture creamy. Adjust salt to taste.
