The name 'Game Day' nachos just came to me while watching a boring soccer match, but they're perfect as a snack for any occasion or get-together.
Cooking Instructions

Season the short ribs with garlic salt and black pepper to taste. Fry for 7 minutes on each side, then add the beer and simmer on low heat until the liquid reduces.

While the ribs are cooking, slice the onion and jalapeños into thin strips. Sauté them in a skillet over medium heat with salt to taste and 1 tablespoon of olive oil.

When the onion is cooked and turns translucent, add the chopped cheese and tomatoes. I removed the tomato pulp for texture and presentation, but that's optional.

When the Oaxaca cheese starts to melt, add enough nacho sauce to make the mixture creamy. Adjust salt to taste.

To serve, spread a layer of tortilla chips in a baking dish, pour the cheese mixture over them, and top with the short ribs cut into small pieces. For extra color and presentation, add a few slices of avocado. Enjoy!
