Buffalo Nachos

We had some leftover buffalo and wasn't enough for a whole family, so I creatively turned it into nachos. Let's just say this will be a new family favorite, buffalo gives it a nice surprise. I recently had a miscarriage, then just two weeks after it, I found out I have chronic congestive heart failure, I'm only in my 30s! My other half has it too, so we're changing our diet to well, live longer. We found buffalo at our local meat market.

Buffalo Nachos

Ingredients

  1. 1 lbground buffalo
  2. 1 packagestortilla chips
  3. 2 canrefried beans
  4. 1 candiced olives
  5. 1 packagesspinach
  6. 1 packagessalad mix
  7. 2 packagesgrated cheese
  8. herbs and spices of your choice ( we use parsley, oregano, pepper, garlic salt, basil, thyme, sage, smidge of cayenne pepper, ground ginger)
  9. 1 cansalsa
  10. 1 packagessour cream
  11. 1/2 eachchopped onion

Cooking Instructions

15 mins

    Preheat oven to 350*F

    Spray/ grease a casserole dish

  3. 3

    Spray or grease a frying pan

  4. 4

    Add buffalo, herbs, spices to frying pan, onions

  5. 5

    Fry til fully cooked, looks like ground hamburger

  6. 6

    Set aside frying pan

  7. 7

    Cook refried beans in a pot

  8. 8

    Pour chips in the casserole dish

  9. 9

    Even out chips so the dish is completely covered

  10. 10

    Spread refried beans across the chips

  11. 11

    Spread buffalo across refried beans

  12. 12

    Drain olives

  13. 13

    Spread olives across buffalo

  14. 14

    Generously layer cheese on the olives

    Stick it in the oven

    Bake til the cheese is melted

    While baking away, take a bowl and alternate tearing the spinach and salad mix to bite size

  18. 18

    Pull out nachos when cheese is melted (20-30 minutes)

    Serve nachos with your salad and spinach mix, salsa, sour cream
