Thai style pork rice bowl

Cook Rice with cold water. This stops the rice from sticking

Halve and peel then chop shallots into small pieces. Peel and grate garlic (or use a Garlic press)
Halve the red chilli lengthways, deseed and finely chop.
Trim and thinly slice the spring onions. Top and tail green beans and cut in half - 3
Heat a drizzle of oil in a large frying pan. Add green beans until tender TIP: add a splash of water and cover to steam if needed. 😁 remove and add into a separate bowl you'll need to use the same pan for the meat

Add pork mince and cook till browned, use a spoon to break up mince as it's cooking. Add the shallots, Garlic, spring onions and as much chilli's as you'd like (add less if you don't like the heat)

Bring back the green beans to the pan.
Add the Ketjap and soy sauce. Then stir everything together until hot - 6
Finish and serve!
Roughly chop coriander, mix a third into the pork
Fluff up the rice with a fork and share between bowls.
Top with pork stir-fry and sprinkle over remaining coriander.
