There is nothing like a homemade fresh lemonade or Nimbu Paani.Sweet, tart and flavourful Lemon Cooler or Citrus Water Concentrate is a great thirst quencher and summertime drink and keeps you hydrated during the scorching summer months. This storable concentrate is easy to prepare and comes handy when you are very thirsty.Just add one part concentrate with 2 parts water, a pinch of black salt and serve over ice.

Cut and squeeze out juice from 10-12 lemons in a bowl.Strain the juice and set aside.Boil sugar with water in a pan or wok till sugar dissolves completely and comes to one string consistency.

When the syrup is slightly sticky add sodium benzoate.Boil 2 minutes and lower flame.Add lemon juice and give it a boil.Add black salt and salt to taste and mix well.Switch off flame.Lemon syrup concentrate is ready.Cool and store in glass bottle and refrigerate.

For making nimbu paani, add 2 tbsp nimbu syrup,few ice cubes and 1/4 th tsp black salt.Add chilled water.Mix well and serve Refreshing Lemon Cooler and stay hydrated during the hot summer months.
For a sugar coated rimmed glass : Smear lemon juice on the rims.Pour a mix of granulated sugar with a pinch of black salt in a plate.Press the empty glass on this plate upside down.When the rim is fully coated hold the glass right side up and pour Nimbu Paani. Garnish with lemon wedges and serve.
