1) Boil potatoes in salted water 15 to 20 minutes or until done....
2) Dice potatoes and put into a bowl and add while warm 1 tablespoon of Lemon juice or apple-vinegar, maybe both; mix well and let cool down.
3) In another bowl mix together mayonnaise,
1 tablespoon lemon juice or apple cider vinegar, maybe both, sugar, mustard, salt, celery seed, and pepper until well blended....4) Stir in the eggs.
5) Sprinkle with parsley and paprika, optional.
6) Refrigerate until chilled.
