Ingredients

  1. 7 tablespoons (100 grams)unsalted butter
  2. 1/2 cup (100 grams)granulated sugar
  3. 1/3 cup (125 grams)molasses (preferably cane molasses)
  4. 1egg yolk
  5. 2 cups (250 grams)sifted all-purpose flour
  6. 1/2 teaspoonsalt
  7. 1/2 teaspoonbaking powder
  8. 1/2 teaspoonbaking soda
  9. 1/2 teaspoonground cinnamon
  10. 1/2 teaspoonground cloves
  11. 1 teaspoonground ginger
  12. 1/2 teaspoonground nutmeg

    Beat the butter and sugar together until smooth. Add the molasses and egg yolk and mix well.

    In a separate bowl, combine the flour, salt, baking soda, baking powder, cinnamon, cloves, ginger, and nutmeg. Add this to the butter mixture and beat until the dough is smooth and uniform.

    Place the dough in a covered container and refrigerate for at least 1 hour.

    Preheat the oven to 350°F (180°C). Roll out the dough to 1/4 inch (about 1/2 cm) thick. Cut out shapes with cookie cutters. Place on ungreased baking sheets, leaving about 2 inches (5 cm) between cookies.

    Bake for 8 to 10 minutes or until golden brown. Transfer to a wire rack to cool completely. Decorate once cooled.
