  1. Cooked white rice: 2 cups (made from 2 cups uncooked rice; about 400 grams)

  7. Mixed vegetables (peas, carrots, corn): 6 tablespoons (about 60 grams)
  8. Seasonings:
  9. Iodized salt: 1/4 teaspoon (1.25 ml)
  10. Umami stir-fry seasoning: 2 teaspoons (10 ml)
  11. Pepper salt: 1/4 teaspoon (1.25 ml)

Steps

  1. 1

    Prepare the ingredients:
    1. Beat the eggs and mix well. Pour into the cooked rice and mix until combined. Let sit for 10 minutes.
    2. Rinse the mixed vegetables.
    3. Mince the garlic.

    1. Slice the pork belly into thin strips or pieces.
    2. Chop the green onions.
    3. Slice the onion into small pieces.

    1. Heat a pan and add oil over low heat. Add the pork belly.
    2. Stir-fry the pork belly, add 1/4 teaspoon salt, and cook until browned.
    3. Add the minced garlic.

    1. Stir-fry the garlic until fragrant and golden.
    2. Increase to medium heat and add the onion.
    3. Stir-fry the onion until soft and translucent.

    1. Add the mixed vegetables and 1 teaspoon umami stir-fry seasoning.
    2. Increase to high heat, stir-fry everything together, then transfer to a bowl and set aside.

    1. In the same pan, heat more oil over high heat. Add the rice and stir-fry well.
    2. Add 1 teaspoon umami stir-fry seasoning and stir-fry until the rice grains are separated.
    3. Add the cooked ingredients back in.

    1. Stir everything together until well mixed.
    2. Add the chopped green onions and 1/4 teaspoon pepper salt. Stir to combine.

    Measurement reference:
    A set of 4 measuring spoons is available at most stores:
    1 tablespoon (1T) = 15 ml
    1 teaspoon (1t) = 5 ml
    1/2 teaspoon = 2.5 ml
    1/4 teaspoon = 1.25 ml
    1 cup = about 240 ml

粒粒分明炒飯,用隔夜白飯~米:水=1:1外面餐館炒飯用白飯~米:水=1:0.8但有胃疾者,水份不能低於1。

戒空-如何打蛋入碗比較安全、衛生?

打蛋要準備2個碗。1. 流理台不鏽鋼碗槽內轉角打蛋,方便清理;打蛋完需擦拭乾淨。留意切勿與熟食,或食材交叉污染。2. 打蛋前先輕輕搖晃雞蛋,水水的聲音代表已經壞掉。(冰箱取出雞蛋,偶爾會有此一現象,但並非壞蛋。)打出的蛋液,放入第1個碗,並⑴目視顏色。⑵嗅聞味道。確認這顆蛋沒有問題。3. 將沒有問題的蛋,倒入集中於第2個碗。△如果只用1個碗打蛋,會有兩個風險:1. 容易感染蛋殼上的沙門氏菌。2. 打到第五顆蛋,結果是臭雞蛋,整碗蛋全毁了。※摸過蛋殼之後,一定要用香皂洗手,沖洗乾淨擦乾。

戒空-購買新鮮豬肉通識

可用手摸,有沾手但不黏手的感覺,猪肉上沒有血;肥肉、瘦肉、紅白分明、顏色鮮豔。水水的肉質,代表:1.冷凍退冰再販售。2.病死豬,屠宰有灌水。新鮮豬肉:瘦肉鮮紅色、淡紅色或淡粉紅色;表皮、肥肉有明顯光澤的白色,絕對不會有水份。不新鮮的豬肉:摸起來黏手、按壓沒有彈性、有異味、肉品盗汗。豬皮有蓋上官方''明顯印章''的再選購。整體肥肉層太薄,"比較可能"含有瘦肉精。整體觀察~1.異常鮮豔。2.肥肉層很薄非常薄。豬毛的顏色發紅、血管滲血或滲水,代表極可能是病死豬。星期一凌晨不殺豬,傳統市場星期一肉販賣的豬肉,是前一天剩下的。星期二早上購買也要留意,也有機會買到星期日剩餘的。(銷售,先進先出,其實也沒有錯誤。)傳統市場購買肉類、海鮮儘量在日出之前採購回家,如果沒有馬上料理,就先冷藏;日出之後,大地溫度上升,1~2小時之後,肉類海鮮未適當保存銷售,就會開始變質,影響健康。

戒空-雞蛋好壞外觀辨識

雞的食物(飼料)決定它蛋黄絕大部分的顏色。壞掉的雞蛋,一般未打開外殼就會有臭味,或是未打開輕搖蛋,水水的就比較不正常,打開有的會發黑會發臭。雞蛋淋過雨水,或是水洗過,未即時乾燥,容易發臭。如果淋到雨水,同時又曬到太陽,會臭到你受不了。沒有經過冷藏的雞蛋,輕輕的搖晃,如果會發出水水聲音的話,99% 已經壞掉了。冷藏的雞蛋,有時候因為冷藏溫度過低,輕輕搖晃會有水水的聲音或感覺,一般都是正常。 如果聲音過大的時候,壞掉的機率比較高。所以,打蛋的時候,必須要打蛋在第一個容器, 沒有故障,再倒入另一個集中的容器,第二個蛋再打入第一個容器,沒有壞掉再倒入第二個容器集中,以此類推。如果,只用同一個容器打蛋,打了5個蛋,第5個蛋打進去發現蛋有問題,前4個蛋就一起報銷了。打蛋的時候,打蛋的擊破位置,在較圓頭3分之1處,蛋殼比較不容易破碎在容器之中。萬一有碎蛋殼掉在容器之中,可以手洗乾淨之後,手指濕潤的狀態之下,伸入蛋容器之中,指尖輕壓碎蛋殼,順著容器邊緣,就可以輕易取出。
