Parboiling the pork first really helps reduce any strong pork smell.

Ingredients

  2. 1 lbpork (lean cut, about 450 grams)
  3. Seasoning
  4. 5 tablespoonssugar (about 63 grams)
  5. 4 tablespoonssoy sauce (about 60 ml)
  6. 2 tablespoonssesame oil (about 30 ml)
  7. Parboiling
  8. 1 1/2 tablespoonsrice wine (about 20 ml)
  9. 6-8 slicesginger

Steps

  1. 1

    Choose a lean cut of pork and cut it into small pieces.
    To parboil, add water and rice wine to a pot. Place the pork in the pot with cold water, add ginger slices, and bring to a boil.

    After rinsing the pork, place it in a pressure cooker (such as an Instant Pot) with green onions and ginger slices. Add just enough water to cover the pork, then add rice wine.
    Cook on the Instant Pot's meat/stew setting for 25 minutes.
    After 25 minutes, remove the pork from the pot and shred it using a rolling pin (a food processor makes this faster).

    Heat a pan and add oil. Add the shredded pork and stir-fry, then add sugar, soy sauce, and sesame oil (skip sesame oil if you prefer).
    Once the pork is evenly colored, transfer it to a container (I use a cake pan).

    Place the pork in the air fryer at 190°F (90°C) for 90–100 minutes, stirring every 15 minutes.
    This simple pork floss is now ready, but I like a finer texture, so I pulse it a few times in a food processor.
