I found this recipe at "www.allrecipes.com" which is one of my favorites recipe sites to visit. I am not a big fan of corned beef or sauerkraut myself, however, my partner & children enjoy it and had recently mentioned that they were missing the taste of it. There are two different recipes for this dish on the website. One is for "Traditional Reuben Casserole" that has more steps and also more ingredients than this one. This particular recipe is simply for "Reuben Casserole" and is very quick & easy with minimal ingredients. Because of this recipe I found a new "go-to" casserole that can be made with easy leftover ingredients and also learned to make homemade "Russian Dressing!" 😄👍

Ingredients

  1. 6 slicesrye bread, cubed
  2. 16 ozcan sauerkraut, drained & rinsed
  3. 1 lbdeli sliced corned beef, cut into strips
  4. 3/4 cupRussian-style salad dressing
  5. 2 cupsshredded swiss cheese

Cooking Instructions

    Preheat oven to 400°. Gather & prepare ingredients. You can use a store bought "Russian Dressing," substitute with a "Thousand Island Dressing," use my personal attached homemade recipe or make your own!

    Begin by spreading bread cubes in the bottom of a 9x13-inch baking dish. Spread sauerkraut evenly over the bread cubes, then layer beef strips over sauerkraut.

    Next, pour dressing evenly over top of casserole. Spray aluminum foil with cooking spray and use to cover the baking dish, sprayed side down. Bake in the preheated oven for 20 minutes.

    Lastly, remove foil. Sprinkle Swiss cheese over the casserole and bake uncovered for another 10 minutes, or until cheese is melted and bubbly.

    Top with chopped onions, sour cream, more dressing, anything you like, or nothing at all! Serve & Enjoy!
