Warm Lemon Chicken Salad
Easy to prepare and it’s lovely for a hot summer time. 😋

Boil some hot water and add in 1 spring onion, a few slices of ginger and some rice wine. Add chicken in and cook it for 20-25 minutes. Shred the chicken and mix with chopped celery in a big bowl.

Mix all the seasoning ingredients in a jar. Add in grated ginger, garlic, chopped spring onion, red chilli and coriander. Pour the seasoning mixture into the bowl of chicken and celery and mix them well. Garnish with some lemon slices (optional). Enjoy.
