When I was still a teenager, I went to visit my 3 cousins and my aunt often made us hundreds of dumplings. Dumplings are the popular dish for large gatherings, and I have been trying to figure out how to make it tasty and beautiful. So far, this one is the best recipe for me.

Now I live in UK and there are few ingredients that I cannot buy here such as Chinese chive, so I cook with napa cabbage instead and it's really delicious.

  • 🥟 Gyoza ingredients - Group A
  • 400 gMinced pork
  • 3 table spoonSoy sauce
  • 3 table spoonSesame oil
  • 3 table spoonSake
  • 1 pinchBlack pepper
  • 5 gGrated ginger
  • 🥟 Gyoza ingredients - Group B
  • 1/4 bunchSpring onion
  • 1/4Napa cabbage
  • 3 table spoonPotato starch (Corn starch)
  • 1 packetGyoza skin
  • Oil
  • Optional ingredients to fry gyoza crispy outside *Amount of ingredients per 1 set/circle shape
  • 150 ccWater
  • 1 table spoonFlour
  • 1 table spoonSesame oil
  • Dipping sauce
  • Sesame oil
  • Vinegar
  • Soy sauce
  • 1drizzle of Ra-Yu (Japanese chili garlic oil)

    Prepare a bowl and mix all the ingredients for group A until it gets sticky. (Minced pork, soy sauce, sesame oil, Sake, black pepper and grated ginger)

    Chop the spring onion. Put in the bowl with meat.

    Chop Napa cabbage in small size. Mix with potato starch. This is to lock in moisture.

    Mix again with your hand.

    Place a small spoonful of meat on the dumpling skin. Dip the edges in water. Fold in half and make 3-4 pleats on the right side. Then, make a pleat from the center toward the left. As you fold each pleat, make sure to press the folded pleat tightly against the back part of the wrapper with your finger.

    Mix 150cc of water and 1table spoon of flour.

    Put 1 tablespoon of oil in a frying pan, arrange the dumplings(please see the step photo). Add the mixture of water and flour.

    Cook under the medium fire until the water boils. Once it boils, cover with the lid and cook over medium heat until the water evaporates.(Check the bottom part once in a while to see if it's not burnt)

    Once the wings are created and it turns nicely brown, pour sesame oil around the edges of the frying pan.

    Place the plate on the pan and carefully turn it over.

    Make the dipping sauce by simply mixing sesame oil, soy sauce and ra-yu(ra-yu is optional).
