Individual Upside-Down Flan, Jon Style

This is another one of my favorite desserts and it's very popular. Ingredients

90 minutes

  • Ingredients for the caramel
  • 1 cupgranulated sugar (about 200 grams)
  • 1/3 cupwater (about 80 ml)
  • Ingredients for the flan
  • 5eggs
  • 3egg yolks
  • 1/2 cupgranulated sugar (about 100 grams)
  • 1 teaspoonvanilla extract
  • 2 cupshot milk (about 500 ml)

  1. 1

    In a stainless steel pan, combine the sugar and water and stir to dissolve. Cook until it turns into caramel, stirring occasionally to prevent burning. Be careful, as it can burn quickly. If the caramel has foam on top, it means it's burned and will taste bitter, so you'll need to discard it and start over.

    Using 8 aluminum ramekins, carefully coat the bottoms and sides with the hot caramel. Be careful not to burn yourself.

    In a large bowl, beat the eggs, egg yolks, sugar, and vanilla extract until well combined. Add the hot milk and mix well.

  4. 4

    ASSEMBLY
    Preheat the oven to 400°F (204°C).
    Place the ramekins with caramel on a baking tray.
    Pour the egg mixture into the ramekins, straining as you pour.

  5. 5

    Pour boiling water into the baking tray until it comes halfway up the sides of the ramekins.

  6. 6

    Bake in the oven for 35 minutes. When you gently touch the tops of the flans, they should feel firm and not stick to your fingers.

    Remove the flans from the hot water and let them cool. Then refrigerate, preferably overnight.

  8. 8

    The next day, run a small knife around the inside edge to loosen the flan.

  9. 9

    Invert each ramekin onto a small plate. Use the knife to make a small hole in the top of the aluminum ramekin to let air in so the flan and caramel release onto the plate.

    Serve immediately.
