Steps

Dice the onion.

Rinse with water. Tear the oyster mushrooms by hand.

Remove the stalk with scissors. Rinse with water. Cut each into halves.

Heat up cooking oil in a frying pan with high heat. Stir fry the onion for about 2 minutes.

Add the oyster mushrooms first which has the most moisture. Stir fry for about 2 minutes.

Add button mushrooms. Stir fry for about 2 minutes.

Add shiitake mushrooms. Stir fry for about 2 minutes.

Add about 4 tablespoons of mirin or other type of cooking wine you had. Stir fry for about 1 minute.

Add 2 tablespoons of sesame oil and 2 tablespoons of dark soya sauce. Mix evenly for about 2 minutes.
