We always have Nduja as my sisters fiancé is from Calabria in southern Italy. This weekend in the greengrocer on East st in Bristol - He told me his favourite breakfast was Nduja scrambled eggs, so I had to try it. They are fabulous 😍🇮🇹

Gather your ingredients. The quality matters. I got some amazing local double cream 😍 and some rich yolk eggs that seem to have a cult following in Bristol

Whisk the eggs and double cream together. Season with Salt and pepper

Put a frying pan on a low heat and add the eggs. Cook low and slow for 2-5 minutes until it feels like it’s halfway to your desired consistency. I like my eggs cooked quite well my wife likes them less cooked. So up to you!

Add the Nduja and mix through the eggs. Some should melt and cover the eggs in beautiful flavour, it’s also nice when there are a few chunks.

Serve! Nice with a heavy sourdough Rye 😍. Start your day with fire in yo bellly 🔥
