Tomato Coconut Soup - Madras Soup

Ingredients

30 minutes
Two persons
  1. 3tomatoes (250 gms)
  2. 1small carrot (30gm)
  3. 1small onion (30gms)
  4. 1/2 cupShredded Fresh coconut
  5. 150 mlmilk
  6. 1 tbsflour (15gms)
  7. 1 tbsbutter(15gms)
  8. 300 mlWater or vegetable stock
  9. Pepper corn few
  10. Salt to taste
  11. parsley or cilantro for garnishing

Cooking Instructions

    Wash and cut tomatoes, peel and slice onion, grate carrot

  2. 2

    Place tomatoes, onion, carrot and coconut in a heavy bottom pan. Add hot water or stock, add pepper corn and salt.

    Cook till vegetables are tender.

    Put this mixture in blender and blend it.

  5. 5

    Pass the mixture through a soup strainer. Keep it aside.

  6. 6

    Prepare white sauce with flour, butter and milk.

  7. 7

    Add vegetable purée gradually. (white sauce and purée should be of the same temperature.)

  8. 8

    Reheat and serve with chopped parsley or cilantro and dash of butter.
