Ingredients

2.5 hrs prep time (for dough) 10mins for baking
  1. 1.25 cupsvital wheat gluten
  2. 1/2 cupoat fiber
  3. 2/3 cupgolden flax seed meal (or the brown flax seed meal)
  4. 1/2 tspxanthan gum
  5. 1 tsphimalayan salt
  6. 0-4tbps powdered sweetener (erithrytol) - depending on how sweet you want it. 2 tbps is the perfect amount
  7. 3eggs at room temperature. 2 for the dough and 1 for the coating
  8. 2tbps softened butter
  9. Pork rinds (for the crispy coating)
  10. Jumbo hotdog of your choice
  11. sticksSturdy/thick barbecue
  12. For Yeast proofing
  13. 1 tsphoney
  14. 1 cupwarm water (50-55 deg C temperature). If you are using DCL yeast make it 49 deg C
  15. 1 tbspactive dry yeast

Cooking Instructions

    Refer to Deidre recipe I posted for the dough of the corndog
    https://cookpad.wasmer.app/us/r/16320452. Do all the steps except that you will put the dough in a bowl. No need to wait for the dough to rise for now. All the ingredients for the dough are mentioned here for easy reference.

    Cook your hotdog by steaming or boiling it in water. When done, remove the water and let it dry.

    When hotdogs are dry, put them in the barbecue stick. Take a portion of the dough and coat the hotdogs with it. The dough will stick if the hotdogs are dry. Put some dough enough to coat the hotdogs and not too thick because the dough will still expand and rise especially during the air fry/ baking process.

    I used the ninja foodi barbecue stick and its holder since I am cooking this in my Ninja foodi cooker+air fryer. You may use the barbecue stick if you plan to use a normal oven

    Beat the 1 egg for the batter. Soak the corndog in the egg then coat it with pork rinds until the dough ia fully covered. You may wait for the dough to rise a bit.

    Put them it the barbecue holder for the ninja foodi or put in a way that the dough is not restricted to rise. You can wait for 10-20mins for the dough to rise a bit.

    You may deep fry or air fry this for about 10-13 mins or until the color is golden brown and crispy. Put some ketchup, kewpie mayonnaise and mustard to your liking.
