Mirza Ghasemi (Mirza Qasemi)🍆🧄🥫🥚

Mirza Ghasemi or Mirza Qasemi (Persian: میرزاقاسمی) is an Iranian appetizer or main based on tandoori or grilled aubergine (eggplant), distinct to the Northern Iran and Caspian Sea region (specifically Gilan province). It is known as Persian eggplant dip in Western countries.
This is one of my family's favorite food. We all love it, with pilaf or flat bread and pickled garlic and fried white fish.

Cooking Instructions

Pour oil in the pan and put the grilled eggplant in the pan.
Then sprinkle the turmeric and arrange the quartered tomatoes in such a way that the skin of the tomato is on top. - 2
Cover the pan and let it cook on medium flame for about 15 minutes. Then easily remove the skin of the tomatoes and crush and mix with eggplants.

Stir fry for about 45-60 minutes on a low heat. It means to drain the water and reveal the strings of eggplant. During this period, stir every ten to fifteen minutes. Then put the ingredients aside and put butter and grated garlic in the middle of the pan and fry a little. Then add salt and pepper and stir well.

After five minutes, we put the ingredients aside again and break the eggs in the middle of the pan. When the eggs are almost set, break them into pieces and mix with the rest of the ingredients. Now it is ready. So delicious with pilaf or flat bread and pickled garlic 👌🏻😋.

These meatballs are very flavorful pack with layers of umami funk and the stew that goes along with it just makes everything almost flawless.This isn't your regular greasy meaty meatballs that you would find in an Italian restaurant; this is a combination of ground meat, rice, peas, herbs and spices. You can use any other cut of meat if desire. I had a hard time locating some of the ingredients, especially dried savory and Persian plums. I had to order them online tho. If you can't get your hands on dried savory, dried thyme would be a great substitute. As for the Persian plums, you can replace it with any dried golden plums. Dried prunes might even do the trick too. This dish is usually served separately, but I decided to serve them all in 1 plate. Perhaps I can make my own Persian pasta and meatballs. What do you think?
