Ingredients

  • Quantity as your preference
  • 1/2 kgcow lungs
    Cleaning cow lungs before cooking WITHOUT washing #CookEveryPart
  • 1/2 KGcow heart
    Cleaning cow heart for cooking #CookEveryPart
  • 1/4 kgbeef kidney
  • 1/4 kgbeef liver
  • leavesFew bay
  • 3potatoes, cut into cubes
  • 3onions, sliced
  • 5tomatoes, grated
  • 2 tablespoonstomato paste
  • 3 cupswater
  • 1/4 teaspoonblack pepper
  • 1/4 teaspooncinnamon powder
  • 1/2 teaspoonlebanese 7spices or allspice
  • drizzle vegetable oil

Steps

    Slice all the different organs into bite sized cubes

    Sautee the meat with bay leaves on oil in a deep pot or pan until browned

    Add the onions with the spices, mix and let it cook on medium heat for 5 minutes without covering the pot because that will get the water of the meat out (especially the heart’s) and make it very dry and hard to chew

    Add the potato cubes and cook for another 5 minutes, then add the grated tomato and tomato paste mixed in 3 cups of water. Mix well to combine all the ingredients

    Cook on low heat for around 30minutes. Eat with flatbread

Tips

Cleaning cow lungs before cooking WITHOUT washing #CookEveryPart

My mom used to argue with my grandma whether to wash the lungs before cooking or not. My grandmother wouldn’t wash, and my mom only got convinced when the butcher himself told her not to wash the lungs because it’s like a sponge, if it absorbs water it’ll become very soggy.

Beef heart should be cleaned very well before cooking because it’s full of all the blood and fat. It’s not that hard to do so. Just a few steps, and the heart will be ready to cook. (You’ll need: cow heart, 1 cup white vinegar, knife, running water)

When to add vegetables to offals

If you’re cooking offals like beef heart, lungs, liver you should sautée them first until brown, then add the vegetables like onions, potatoes… because those organs are bloody in general and you should not add the vegetables with them in the same pot if they’re still raw. Otherwise, the vegetables will be covered a d cooked in blood and their taste will not be that good in the end.
