Appam

Appam is a popular dish from Kerala. Appam are soft and fluffy pancakes made out of rice and coconut batter which is fermented. The edges are thinner compared to the soft and fluffy centre. It is even served with sweetened coconut milk for breakfast.

Appam is a popular dish from Kerala. Appam are soft and fluffy pancakes made out of rice and coconut batter which is fermented. The edges are thinner compared to the soft and fluffy centre. It is even served with sweetened coconut milk for breakfast.

First of all wash and soak rice for 4 hours. Now drain the water out of the rice. Add rice, poha, coconut, sugar, salt and water to a mixer jar and grind it to make a smooth paste.

Add yeast to warm water and let it bloom for five minutes. Now mix it with the rice batter and give it a good mix. Cover and leave it for 2 hours or until double in size. It takes longer time in winters than in summers.

Heat a non-stick kadai with two handles on medium heat. Now pour a ladelful of batter in the centre and tilt the pan to spread the batter in the pan so that it makes a perfect round shape. Cover the lid and cook it on medium heat until cooked from the bottom properly. Remove it and keep it on a wire rack.

Repeat the process to prepare the remaining appam. Make sure that the pan is medium hot while you pour the batter otherwise it will be difficult to spread it around the pan evenly. Keep the appam covered with a kitchen towel until the time of serving.

Serve hot or warm appam with vegetable korma or vegetable stew or sweetened coconut milk.
