Vegetable Kurma / Vegetable Korma

Korma or Kurma is an Indian curry which has many variations depending upon particular regions. It can be prepared using vegetables or meat. In North India it is called korma which is a creamy and rich curry prepared using onion, nuts, seeds, yoghurt and cream while in southern part of Indian kurma is light and flavourful which is made using onion, nuts, seeds , yoghurt and coconut milk.
South Indian style vegetable kurma tastes absolutely delicious served with appam, dosa or plain rice.

Ingredients

  • Kurma Paste -
  • 3 tbspfresh or desiccated coconut
  • 8cashew nuts soaked
  • 1 tsppoppy
  • 1/2 tbspchana daal
  • 1 tspcoriander seeds
  • 1/2 tspfennel seeds
  • 1green chilli
  • 1 tspginger paste
  • 1 tspgarlic paste
  • 1/4 tspcumin
  • 2cloves
  • 1cardamom
  • 2peppercorns
  • 1/4 cupwater
  • Vegetables -
  • 1/2 cuppotatoes chopped
  • 1/2 cupcarrots chopped
  • 1/2 cupgreen beans chopped
  • 1 cupcauliflower florets
  • 1/2 cupfresh or frozen green peas
  • Curry -
  • 2 tbspcoconut oil
  • 1bay leaf
  • 1cinnamon
  • 10curry leaves
  • 1onion chopped
  • 1tomato chopped
  • 1/2 tspturmeric
  • 1/2 tspchilli powder
  • 1/2 tspgaram masala
  • Salt to taste
  • 2 tbspyogurt /curd
  • 1.5 cupwater
  • 2 tbspcoriander leaves

Steps

    Add all the ingredients under Kurma paste along with water and grind it to a smooth paste. Keep it aside.

    Heat oil in a pan and add bay leaf and cinnamon to it. Now add curry leaves and chopped onion to it and saute it until light pink in colour. Add tomato to it and cook it until little soft. Add turmeric, chilli powder, garam masala and salt to it and mix everything well. Now add the prepared kurma paste to it and cook everything for 5 to 7 minutes until the spices are cooked properly and the oil starts to release.

    Now add yoghurt to it and give it a good mix. Add all the prepared veggies to it and mix everything well. Add 1.5 cup water to it and cover and cook it on medium heat until vegetables are just done. Make sure that vegetables are not over cooked. Add coriander leaves and turn off the heat.

    Serve flavourful vegetable kurma with appam, dosa or rice.
