Spicy, tangy, and crispy, Mirchi Vada is a delicious snack. Jodhpur's Mirchi Vada is very famous and is made with thick, mild green peppers. The peppers are stuffed with a tangy potato filling and then deep-fried in a chickpea flour batter.

Spicy, tangy, and crispy, Mirchi Vada is a delicious snack. Jodhpur's Mirchi Vada is very famous and is made with thick, mild green peppers. The peppers are stuffed with a tangy potato filling and then deep-fried in a chickpea flour batter.
Steps

Wash and dry the green peppers thoroughly. Make a slit as shown in the picture and remove the seeds from the peppers.

In a mixing bowl, add the chickpea flour, turmeric powder, red chili powder, asafoetida, carom seeds, and salt to taste. Gradually add water and whisk to make a batter.

Prepare a smooth, lump-free batter. The consistency should be neither too thick nor too thin.

Heat 2 teaspoons of oil in a pan. Add cumin seeds and asafoetida, and sauté for a few seconds. Add the mashed potatoes. After sautéing the potatoes for 2 minutes, add all the listed spices and sugar. Mix well and cook until the filling is flavorful.

Once the potato filling has cooled, add lemon juice and mix. Stuff the filling into all the peppers.

Add a little baking soda to the prepared batter and whisk. Dip the stuffed peppers into the batter, then deep-fry in hot oil. After adding the peppers to the oil, keep the heat at medium.

Fry all the stuffed peppers in the same way and remove them once golden and crispy.

Serve hot Jodhpuri Mirchi Vada with your favorite chutney or sauce.
