I always make Biryani in my mom style .. But now a days we all love to eat Daigh style.. So I learnt some steps which I will be sharing with you all..

In a bowl take yogurt along with ginger garlic n chilli paste..

Along with all dry spices mention above..

Whisk well and marinate mutton for 2,3 hours.. preferably over night..

Now heat oil add tomatoes..

When tender add marinated mutton.. bhounfy for 8,10 min..

Now add 3,4 glass of water and cook on medium low flame till mutton tender..

Now add brown onion.. bhounfy and cook for more 6,8 min more..

Cut potatoes in cubes and boil with food colour.. set a side..

Soak rice accordingly..

Now boil with salt and some all spices(star anise, black cardamom, black cloves, pepper corn, cinnamon stick and bay leaves)

Add rice n boil for 8 min..

Assembling: my mom pro tip..

In a big pot first grease the bottom with gravy oil..

It gives extra flavour to the Biryani..

Now layer it with 1/3 third of rice..

Now add potatoes and gravy..

Add some tomato slices, green chillies and coriander..

Squeeze lemon juice on top..

Cover with remaining rice..

Sprinkle food colour then add kewra water and ghee..

Cover the lid.. first put on high flame for 4,5 min..

Then switch it to medium low for good 15 mins.. Yummy biryani is ready to eat..

Serve with Raita n kachumber..
