Low fat spinach and corn sandwich

This is one of my many healthy experiments. I love homemade sandwiches and burgers because you can control the amount of fat you are putting it in and also you can put in healthier ingredients instead of lot on cheese, butter, mayo and that processed, deep fried patty.
I am in practice of using minimal oil for my cooking for quite sometime now and for the same reason I consider myself eligible for giving some handy tips on low oil /no oil cooking😛
Invest in a good non stick pan.
Fine chopped veggies cooks up faster and hence needs lesser oil.
Steam or par boil the veggies before u stir fry.
keep spraying some water once in few minutes (if required).

Brush a non stick pan with few drops of olive oil, once heated, add in the chopped spinach and corn, saute until the water released from the spinach dries up, it should take 10 -12 minutes.

To the cooked corn mixture, add mayonnaise, season with salt and italian seasoning, toss to mix well.

Take a bread slice, spread about a tablespoon of the prepared mixture, cap it with another bread slice. Repeat to make several sandwiches.

Serve with a hot or cold beverage.
