Ingredients

4 servings
  1. 2 tablespoonswhite kidney beans (soaked overnight)
  2. 2 tablespoonschickpeas (soaked overnight)
  3. 2 tablespoonsblack-eyed pea (soaked overnight)
  4. 2 tablespoonsblack gram (soaked overnight)
  5. 2 tablespoonschana dal
  6. 1 tablespoontoor dal
  7. 1 tablespoonmasoor dal
  8. 1 tablespoonsplit urad dal
  9. 1 tablespoonsplit moong dal
  10. Masala
  11. 1 teaspoonolive oil
  12. 2onion (finely chopped)
  13. 2tomato (blended to paste)
  14. 1green chili (finely chopped)
  15. 1 (1 teaspoons)ginger garlic paste table spoonturmeric powder
  16. to tastesalt
  17. 1 tablespoonchole masala (or to taste)
  18. 1/2lemon (juiced)
  19. 2 teaspoonscumin seeds
  20. 1 tablespoonmint leaves paste (yeah, thats the magic ingredient)

Steps

  1. 1

    In a pressure cooker, add in all the lentils, along with 4 cups of water, turmeric and salt, cook for about 15 minutes.

  2. 2

    While the lentils are cooking, take a wok, put a teaspoon of olive oil, once heated, add cumin and green chilies and cook for few seconds.

  3. 3

    Add the onions, and saute on low flame for 5-7 minutes. (Cooking 2 onions in a teaspoon of oil is difficult, is’nt it ?) When the onions tend to dry up, add in the tomatoes and ginger garlic paste, cook for another 5 minutes.

    Once the lentils are cooked, add the prepared masala to the pressure cooker, add chole masala and mint leave paste, cook for another 2 whistles.

  5. 5

    Allow the steam to escape, open the cooker and drizzle some lemon juice and stir. Garnish with some ghee (if desired). Serve with hot chapatis or parathas.
