Ingredients

30 minutes

4 - 6 Servings

1 tbspthinly sliced onion
1large or 2 medium fennel bulb thinly sliced
6pitted dates thinly sliced
1 tbspolive oil
1 tspchopped garlic
2 tbspwine vinegar
2 tbspchopped basil
2 tbspchopped mint
2 tbspcapers
2-3 tbspchopped pistachios
1 tbsplemon or lime juice
1 tsplemon or lime rind
1small apple chopped or sliced or 1 cucumber chopped or sliced
1/4 cupquinoa cooked as per directions on package and chilled
Salt pepper to taste
1-2 tbspraisins or Craisins
Opt Cherry tomatoes cut
Opt celery
Optional avocado

After all ingredients are sliced, diced or chopped add to bowl and toss.

Cover and chill 30 minutes before serving
