Pithla is a traditional Maharashtrian recipe that is made with gram flour or as we call it, Besan. The gram flour is cooked along with garlic, green chilies, curry leaves, onions, coriander leaves, and spices. It is mandatory to make in every Maharashtrian household with Bhakri, during Monsoons. Ingredients

  • 1 cupBesan
  • 3 cupsWater
  • 1 CupOnion
  • 4Green chilies
  • 3-4 ClovesGarlic
  • 1 inchGinger
  • 1Curry Leave
  • 1 tspMustard seeds
  • 1 tspCumin
  • 1/4 tspHing
  • 1/2 tspturmeric
  • 1/2 cupcoriander
  • 2 tspoil
  • as requiredSalt to taste

  1. 1

    First add besan, 2 cups water and salt into a bowl. Now, mix well so that no lumps remain.

    Then grind green chillies, ginger and garlic in a mortar and finely chop the onion and coriander.

    Heat oil in a pan, add mustard seeds and cumin, Curry leaves and onion and saute till pink. Then add hing, turmeric and green chillies, ginger, garlic paste, saute for 2 minutes, add 1 cup water and let it boil.

    Then keep the gas flame slow, add the besan mixture and keep stirring. Once the mixture thickens a little, cover it and let it rise for the next 5 to 7 minutes. Now, add coriander and mix it well then turn off the gas flame.

    Pithal is ready, serve with hot sorghum roti, dry garlic chutney, onion and buttermilk.
