Pierce the aubergine with disposable chopsticks to make a hole.

Grilled the aubergines over an open fire with the skin on.
Grill firmly until the skin is charred. - 3
Soak in water and peel off the skin.

Drain and cut them.
Serve with grated ginger and soy sauce or men-tsuyu (Soup Base for Noodles) or Yuzupon. - 5
You can eat soak with men-tsuyu, and served with soumen noodle.
