This Asian inspired beef stir fry is a quick and easy recipe thats packed with flavour. The addition of Szechuan peppercorns will leave you with a warming tingle feel making you want to go back for more!
You can substitute the beef mince for Turkey, Pork, Mushrooms or Quorn Mince

This Asian inspired beef stir fry is a quick and easy recipe thats packed with flavour. The addition of Szechuan peppercorns will leave you with a warming tingle feel making you want to go back for more!

Finely chops your onion, garlic and chilli before peeling and grating your ginger.

Wash your rice in a sieve until the water runs clear before adding it to a pan along with 300ml of water. Bring the water to the boil before removing from the heat and covering with the pan lid and tea towel. Your rice will be cooked after approx. 20 minutes or once all the water has absorbed into the rice.

Heat a tbsp of oil in a pan, one it is up to temp add your onions and cook until translucent.

Add in your ginger, garlic and chilli and cook for a further minute.

Cut of out the stems of the spring greens and finely shred. Add a little oil to a pan or pop in the air fryer with some salt. This is your ‘seaweed’.

Add in your mince meat and cook until it is browned all over.

Add your Szechuan pepper corns to a pestle and mortar and grind to a powder consistency before adding it into your pan.

Stir through your sauce ingredients and proceed to cook until it has reduced. The sauce should be sticky and coat the ingredients in the pan.

Fry your egg in a separate pan, you want to leave your yolk nice and runny to act as a sauce for the dish.

Start playing up, start by adding your rice to your plate or bowl, followed by your seaweed, your beef and finally your egg. Finish the dish with the garnish.
