“Lazy” Manicotti With Meat Sauce

I was going to make stuffed shells, but I wasn’t looking forward to stuffing all the individual pasta shells. So I decided to use lasagna noodles and made little roll-ups to look like small manicotti! This approach was quicker, AND it allowed me to easily distribute my filling equally between all the “manicotti.” Hooray for the lazy approach! 😁
“Lazy” Manicotti With Meat Sauce

Cooking Instructions

Assemble your ingredients.

For the Filling:
In a bowl, combine whisked egg, ricotta, shredded cheese blend, parsley, salt and pepper. Mix well, and refrigerate until you’re ready for the next step.

Sauté the sausage until browned, then drain it to remove excess oil. Repeat with the ground turkey.

Chop the vegetables and sauté each batch individually in a small amount of oil. Add the garlic to the cooked onion and only sauté it for about a minute.

Transfer the meats and sautéed vegetables to a large pot. Add the canned tomatoes, the marinara sauce, red wine, and spices.

Bring to a boil, then reduce heat and allow to simmer, uncovered, for about 30 minutes. Stir occasionally.

Meanwhile, cook the lasagna noodles according to the package directions.
Transfer the cooked noodles to cookie sheets that have been lined with aluminum foil and sprayed with no -stick baking spray (e.g. Pam) - 8
Preheat the oven to 350°F (175°C).
Ladle some of the meat sauce onto the bottom of a 9x13” and an 8x8” baking pan.

Cut each lasagna noodle in half, then place about 2 heaping Tablespoons of the cheese filling onto each.

Roll the noodle around the filling, then place seam side down into the baking pans.

Cover all the noodles with the remaining meat sauce, then top with the shredded cheese.

Bake for 30 to 35 minutes, or until the cheese is lightly browned.

I love to use rigatoni with meat sauce because it picks up the sauce so well! Also, I like to change my sauce ingredients depending on what I have around at the time, and what I'm in the mood for, as far as vegetables & toppings go. One thing I almost always add to my sauce is the brown sugar. The kids and I both enjoy the sweetness in the sauce. You can make this into a cheesy sauce by adding parmesan and/or other cheeses and even cream. You can make this into a savory & spicy sauce by adding crushed red pepper and/or other hot peppers. You can add vegetables to the sauce to make a "garden medley." And, you can even make this with vegan meat! Of course sauce will always get better the longer it simmers with the ingredients. This is made quick for dinner. Its summertime and I wanted to make a lentil dinner. Usually I make Lentil Stew but its too hot for that. So I wanted to do something else. I found this recipe in my Forks Over Knives cookbook called Spaghetti with Lentil Ragu. This "meat" sauce is based on that recipe. The recipe calls for diced tomatoes but I chose a can of crushed tomatoes to make a sauce. I also put the lentils through a blender to make the lentils more ground meat like . Topping it with cheddar cheese really finished it off perfectly. I hope you'll like it as much as my family did. Debbie
