“Lazy” Manicotti With Meat Sauce

I was going to make stuffed shells, but I wasn’t looking forward to stuffing all the individual pasta shells. So I decided to use lasagna noodles and made little roll-ups to look like small manicotti! This approach was quicker, AND it allowed me to easily distribute my filling equally between all the “manicotti.” Hooray for the lazy approach! 😁

Ingredients

~2 hours total, broken up
Makes 32 manicotti
  1. For Meat Sauce
  2. 1 poundground turkey (~450 g)
  3. 1/2 poundsweet Italian sausage, crumbled (~226 g)
  4. 1large onion, chopped
  5. 8 ozmushrooms, chopped (226 g)
  6. 1bell pepper, chopped
  7. 5 clovesgarlic, minced
  8. ~2.5 cups marinara sauce (23.5 oz or 666 g), homemade or store bought
  9. 28 ozcan crushed tomatoes (~3 cups, or 794 g)
  10. 14.5 ozcan diced tomatoes (~1.75 cups, or 411 g)
  11. 1/2 cupred wine (120 ml)
  12. Oregano and Basil (fresh or dried, to taste). Optional (if your marinara already contains this, you can omit it)
  13. Pasta
  14. 12 ozbox lasagna noodles (340 g)
  15. Cheese Filling
  16. 1large egg
  17. 30 ozricotta cheese (850 g)
  18. 5 ozshredded Italian cheese blend (Asiago, Parmesan, Romano, Provolone) (142 g)
  19. 2heaping Tablespoons chopped parsley
  20. 1/4 teaspoonsalt
  21. 1/4 teaspoonpepper
  22. Topping
  23. ~2 cups shredded mozzarella or Italian cheese blend (8oz, or about 226 g)

Cooking Instructions

    Assemble your ingredients.

    For the Filling:

    In a bowl, combine whisked egg, ricotta, shredded cheese blend, parsley, salt and pepper. Mix well, and refrigerate until you’re ready for the next step.

    Sauté the sausage until browned, then drain it to remove excess oil. Repeat with the ground turkey.

    Chop the vegetables and sauté each batch individually in a small amount of oil. Add the garlic to the cooked onion and only sauté it for about a minute.

    Transfer the meats and sautéed vegetables to a large pot. Add the canned tomatoes, the marinara sauce, red wine, and spices.

    Bring to a boil, then reduce heat and allow to simmer, uncovered, for about 30 minutes. Stir occasionally.

    Meanwhile, cook the lasagna noodles according to the package directions.
    Transfer the cooked noodles to cookie sheets that have been lined with aluminum foil and sprayed with no -stick baking spray (e.g. Pam)

    Preheat the oven to 350°F (175°C).

    Ladle some of the meat sauce onto the bottom of a 9x13” and an 8x8” baking pan.

    Cut each lasagna noodle in half, then place about 2 heaping Tablespoons of the cheese filling onto each.

    Roll the noodle around the filling, then place seam side down into the baking pans.

    Cover all the noodles with the remaining meat sauce, then top with the shredded cheese.

    Bake for 30 to 35 minutes, or until the cheese is lightly browned.
