Ingredients

20-30 minutes
4 people
  • 1/2 kgBrinjal
  • 2potatoes
  • 1onion
  • 1tomato
  • 1/2 tspmustard
  • 1 tspcumin seeds
  • 1 tspFennel seeds
  • 1 pinchhing
  • 1 pinchturmeric powder
  • 1 tspginger garlic paste
  • 2 tspcurd
  • 1/2 tspred chilli powder
  • 1 tspKashmiri chilli powder
  • 1 tspCoriander powder
  • 1 tspGaram masala powder
  • as requiredSalt & oil as required
  • as requiredCurry leaves & coriander leaves as required

Steps

20-30 minutes
  1. 1

    Heat oil in a pan. Add raw potatoes cut into cubes. Stir fry well till they turn brown & crisp. Set Aside

  2. 2

    To the same pan, add oil. Add mustard, cumin, fennel seeds, hing. Once it starts to splutter, add onions & curry leaves. Saute till the onions turns transparent 

  3. 3

    Add ginger garlic paste and fry till the raw smell leaves. Add tomato and mix well.
    Add sliced brinjal and stir well in high flame for 2-3 minutes. Close and cook for 5 minutes. Wait till the brinjal is cooked 80%

  4. 4

    Next add curd. Add the roasted potatoes. Add salt & all the spice powders one by one. Mix well till it combines together. Close and cook for another 10 minutes. Finally garnish with some coriander leaves and serve hot with rice/ Chappathi.
