Bunny eggs

This dish came about because I wanted a fun new way to serve breakfast. So I hollowed out a leftover hamburger bun, dropped in an egg, threw a cheese slice on top and grilled it in a pan. Origin-wise, it takes its cue from toad-in-the-hole and spinach dip (or chili) in a bread bowl. Experience-wise, it was one of the yummiest eggs-on-toast I've ever had. The bun was buttery and crunchy, the egg silky smooth and oozing, and the cheese melty. My daughter loved it too, especially when I named the dish bunny eggs. She thought those were the funniest words she'd heard since banana.

Slice the top third of the hamburger buns off, and scoop out enough of the insides to make little pockets for the eggs.

Add a good knob of butter to a non-stick pan on low heat. Once the butter's melted, lay in the hamburger buns, hollowed-side up. Don't forget the bun tops. Crack one egg into each bun, and season with salt and pepper. Cover the pan with a lid and let cook for 6 to 8 minutes.

Remove the lid and flip both the buns and bun tops over. Let fry for about 1 minute, then flip them over again. Top the buns with cheese slices and put the lid back on. Turn off the heat and wait 1 minute, to allow the cheese to melt. Put the bun tops back on before serving.
