Wash the Pumpkin leaves well, cut the stems, and chop fine. Add to a mixing bowl and add poppy seed paste, green chili paste, mustard paste, green chilies, turmeric powder, and salt and mix well, set aside covered for 10 mins

In a wok add the pumpkin leaves mix and add 1/2 cup water, cover to cook for 10 mins in between stirring

Once dry add mustard oil and mix

Serve with fried ‘Bori’ garnished and enjoyed with steamed rice
