This is a traditional Mexican dish that you can always find in any market, especially in September.

Always have all your ingredients ready. Place a pot with water, the chicken breast, onion, and garlic over heat. Cover and cook for about 1 hour. Once the chicken is cooked, let it cool, shred it, and set aside.

Heat a pot over medium heat. Add a splash of oil and let it heat up. Sauté the chopped onion until it changes color, then add the chopped tomatoes and cook until they release their juices. Add salt.

Once seasoned, add the shredded chicken and the cilantro (washed and finely chopped). Lower the heat, cover, and cook for 5 more minutes.

Let the mixture cool. Take a warm flauta-style tortilla, place a generous portion of chicken (without too much liquid) on it, and roll it up tightly. Repeat until all the chicken is used. Heat a skillet, add enough oil, and once hot, fry the flautas until golden brown.

Turn the flautas so they brown evenly. Once golden, remove from the oil and drain on a rack or paper towels to remove excess oil. Serve with sour cream, cheese, shredded lettuce (washed and dried), grated cheese, and your favorite salsa.
