Steps

For Saffron Batter - drain soaked Dosa rice and add to blender.

In a pan heat 1 tsp oil and add garlic cloves, sliced onion and cook till translucent, add deghi Mirch, coriander seeds, and stir once, set aside to cool, add to blender with rice

Add 1/2 cup water and blend smooth, add more water to make a watery consistency and set aside. Add salt and mix well, set aside

For White Batter - add drained soaked Dosa rice to blender, add grated coconut and 1/2 cup water to blend smooth, add more water to make a watery consistency, set aside, add salt and mix

For Green Batter - wash spinach and add to hot water, Blanch for 2 mins and add to chilled water to retain the green colour, add to blender, add grated coconut, green chilli and drained Dosa rice. Add 1/2 cup water and more to blend smooth for a watery consistency, add salt and mix

All batters are ready

In a Dosa Tawa add coconut oil and first add a ladle of saffron batter, then white in the centre and then green, cover to cook for 2 mins, gently check the edges and fold half and set aside.

Don’t flip sides like other Dosa

Plate and enjoy with Chutney
