A new recipe inspired by an ancient wine chicken recipe. I will be using beer instead.
Steps

Cut shiitake mushroom to small size.

Cut ginger to thin slices. Cut the spring onion green parts into 2 inches long.

Remove the seeds. Cut chilli to thin strands.

Rinse the basil leaves. Leave aside.

Coat the frying pan surface with half tablespoon of cooking oil. Sear the chicken parts with medium heat.

Add ginger and spring onion. Cook until fragrant.

Add sesame oil and dark soya sauce. Mix the color evenly.

Add the beer. Bring it to boil slowly with medium heat.

Add the mushrooms. Simmer until chicken parts are fully cooked. Use a chopstick to poke the chicken to test.

Add basil and chilli. Best served with cooked rice which help balance the saltiness of the sauce.
