Ingredients

  • 1chopped onion
  • 2large tomatoes
  • 1 tablespoongarlic
  • 1 tablespoontomato paste
  • Fresh basil to taste (about 10 leaves)
  • 1 teaspoonsalt-free Italian seasoning
  • 3/4 cuphomemade unsalted vegetable broth (about 180 ml)

Steps

    Sauté the onion in oil.

    Add the tomatoes and garlic. Cook for 2-3 minutes.

    Add the tomato paste, basil, and seasoning.

    Add the broth to cover the tomatoes. Simmer for about 5 minutes or until the tomatoes are soft.
