Ingredients

  • 2medium onions, minced
  • 4 cupchicken broth
  • 4 tbspbutter
  • 2carrots, diced
  • 1 cupdice celery
  • 4 cupsdiced potatoes
  • 1 (28 oz)cans diced tomatoes
  • 5 cupswater
  • 1 tbspsalt
  • 1 tsppepper
  • 1 tbspdied parsley
  • 6 (6.5 oz.)cans chopped clams

Steps

  1. 1

    Saute onion in butter until golden. Add remaining vegetables, water, chicken broth, salt and pepper.

  2. 2

    Cover and bring to a boil, reduce heat and simmer for an hour.

  3. 3

    Take off heat and add clams and clam juice. Cover and let stand for half hour.

  4. 4

    Heat for 10 minutes when ready to serve.
