1large or 2 medium red onions, roughly chopped
2medium tomatoes, chopped
3 TBSground coriander
2 tspIndian chilli powder, or more to taste
1 tspturmeric
6 clovesgarlic
2 inchpiece of peeled ginger, chopped
1 poundchopped boneless chicken pieces, or one whole chicken chopped with bones
1 cancoconut milk
2 cupswater

Fry first 7 ingredients well, then puree and set aside.

Fry chicken pieces in oil.

Add puree, water and coconut milk to chicken and simmer 10-15 minutes.

Garnish with fresh coriander.

Serve over rice.
