Ingredients

10 -14 servings
  1. 1/2Yellow onion, diced
  2. 3garlic cloves, minced
  3. 4boneless chicken breasts
  4. 14.5 ozcan diced tomatoes
  5. 2 tablespoonbutter or margarine
  6. 8 ozsliced mushrooms
  7. 4celery stalks, chopped
  8. 4large carrots, chopped
  9. 48 ozchicken broth
  10. 28-48 ozwater, depending on taste
  11. Fresh minced basil to taste
  12. Juice of one lemon
  13. Salt and pepper to taste
  14. 2 boxesGnocchi (32 oz total)

  1. 1

    In large pot over medium high heat, add olive oil covering bottom of pot. Add butter, onion, and garlic. Cook until opaque.

  2. 2

    Dice the canned tomatoes and add to pot along with carrots and the mushrooms and simmer. Add salt and pepper. After a few minutes, add chicken broth and 28 ounces of water.

  3. 3

    Add fresh basil, celery, and juice of one lemon.

  4. 4

    Remove skin and excess fat from chicken and add it to the pot. Cook at a low boil for 60 minutes, then remove chicken and either shred with two forks or cut into pieces and return to pot.

  5. 5

    Mix gnocchi and chicken into pot. Simmer for 15 minutes and serve.

  6. 6

    Serve with fresh cut baguette
