Just back from France, I’m trying out this fusion recipe that’s been on my mind for a while: the bitterness of arugula and the sweetness of salmon come together with tangy crème fraîche.

Just back from France, I’m trying out this fusion recipe that’s been on my mind for a while: the bitterness of arugula and the sweetness of salmon come together with tangy crème fraîche.

Place the crème fraîche and half of the arugula in a blender. Blend until you get a smooth, green sauce.

Add the smoked salmon or gravlax, as you prefer, and stir in a tablespoon of black sesame seeds (they pair perfectly with the salmon).

Drain the gnocchi, add the remaining arugula, and sauté over high heat for about 1 minute. If it’s too dry, add a ladle of the cooking water. The arugula should turn a bright green. Plate and serve.
