Chicken Pasta Alfredo (extra creamy)

Cook pasta to al-dente in boiling salted water. RESERVE SOME PASTA WATER FOR LATER

Rub fajita seasoning onto chicken strips. Heat oil in a shallow pan or pot to medium/ high heat. Add chicken pieces and cook for 5 minutes or until chicken is browned on both sides. Take chicken out of the pan and let rest on a bowl

Meanwhile, add bell peppers, onion and garlic to pan and stir-fry for 2-3 minutes or until onions are fragrant and tender. Add tomatoes and cook stirring until it releases some juice but is not cooked to shrink all the way

Add chicken, cream (or milk/cornstarch mixture) and pasta water to pan. Stir and simmer for a few minutes or until the sauce slightly thickens. Finally add the pasta and cheeses (a little at a time), gently stirring until cheese is fully melted and all contents are combined
