Ingredients

Soak overnight, prep 1/2 hour
2 people
  • Cupdry whole unhulled soy beans
  • 3 cupswater to soak, 4 cups of water to blend
  • Equipment: cheese cloth bag, funnel, food processor, 6 quart dutch oven or large pan,(soy milk foams lots when heating), skimmer
  • Cost: beans, 75 cents, makes 4 cups unfiltered soy milk, 3 cups filtered, 25 cents per cup

Steps

Soak overnight, prep 1/2 hour
  1. 1

    Soak cup of dry beans overnight in 3 parts water till small bubbles appear on top of the water. Makes two cups when soaked. Run beans in breadmaker with whisk to remove loose hulls. Rinse clear, drain.

    Mix with 4 cups of water. Blend in food processor till smooth and creamy. Put in large 6 quart dutch oven or pan.

    Heat slowly. DO NOT BOIL. Skim off foam as it develops, set aside.

    Filter soy milk through cheese cloth bag, squeeze, set soy solids aside. Cool fresh milk in fridge. 4 cups unfiltered makes 3 cups fresh, creamy smooth filtered milk. Enjoy.

    Tip: the saved filtered milk solids and foam make great breakfast pancakes when mixed with whipped eggs and thickened with all purpose flour.

I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste.
