I found a couple of basic granola recipes in my cook books and did some experimenting by combining them until I got something I liked. With this recipe, you can do a lot of customizing with the types of fruits, nuts, and seeds you use. It would also serve as a basic recipe to go off of if you want to try some new flavor combos on your own!

Ingredients

  1. 3 cupsrolled oats
  2. 1/4 cupwheat germ (optional)
  3. 1 cupmixed nuts and seeds (sunflower, pumpkin, etc)
  4. 1/2 cupshredded coconut or coconut chips
  5. 1/2 tspground cinnamon
  6. 1/4 tspsea salt
  7. 1/2-3/4 cup(85–100 g) honey or maple syrup to taste
  8. 2 Tbspcoconut oil (optional)
  9. 1 tspvanilla extract (optional)
  10. 1/2 cupdried fruit like dates, figs, raisins, or cranberries

Cooking Instructions

    Preheat oven to 350°F/180°C.

    In a medium bowl, combine all the oats, wheat germ, coconut, nuts/seeds, salt, and cinnamon. Mix up with a large spoon.

    Mix in the honey, coconut oil, and vanilla extract.

    Spread over an oven sheet and bake for 30 minutes, mixing everything 10 minutes.

    Remove from oven and mix in the dried fruit. Let cool to room temperature.

    Store in a ziplock bag or container. Keeps indefinitely if stored in refrigerator!

    Enjoy in a bowl with milk or over yogurt.
