Fish Momo with Fish Balls in Red Sauce

In a mixing bowl add maida + salt + baking powder + oil and mix well, then gradually add water to knead a soft dough. Allow to rest for 10 - 15 minutes.

Lightly (50 %) fry marinated Bacha fish fillets, allow to cool.
Then de bone and keep aside. - 3
In moderately heated pan add oil, add ginger + garlic and sauté for few seconds then add chopped onion and sauté till translucent, then add fried fish pieces + salt and again sauté for 3-4 minutes. Allow to cool. Add chat masala and mix well. Momo filling is ready.

Now take the dough and knead again for around 2 minutes.
Then pinch small portions from dough and roll out small and thin round shape (just like roti). - 5
Then take 1-2 tsp of prepared Momo filling and place right in the middle and seal by joining the edges to form Momo shape.

Steam for 10 minutes and Momo is ready, keep aside.

Lightly fry the marinated fish (50 %) and allow to cool.

Then remove skin and remove bones.

Add mashed potato + salt + ginger + pepper powder + corn flour to fish and mix gently.

Give round round shape of balls and dip in slurry of maida + water.

Coat the balls in corn flour all over and keep aside.

Deep fry the balls till golden brown and keep aside.

Assemble ingredients for Red Sauce.

Make paste of tomato + green chilli + ginger.

In moderately heated pan add oil, add garlic and sauté for few seconds then add tomato paste + salt and cook till water evaporates.

Evaporated.

Now add tomato sauce + water + sugar and cook under low to medium flame till sauce starts thickening and shiny.
Then add fish balls and mix well so that balls coat well with sauce very nicely.
Lastly add momos, simmer and cook further for 1 minute and dish is ready. - 18
Transfer to serving dish and serve hot hot.
