PHIRNI is a popular and adorable dessert prepared specially during festivals and enjoyed anytime in the year.

Steps

Soak rice for 5-6 hours and then coarsely grind by adding around 1 cup Milk.

Finely chop beetroot, boil Beetroot by adding 1/4 cup water + salt + sugar, boil for 5-6 minutes and allow to cool. Then grind into smooth paste.

Assemble all ingredients

Put milk to flame, Simmer milk for 5-6 minutes to reduce it, under medium flame.

Now gradually add cardamom pods + rice and keep stirring to prevent clumping.

Keep stirring till rice cooks and starts thickening. Add sugar and stir well.

Gradually mixture thickens and the rice is cooked.

Add 4-5 tbsp Beetroot paste and stir nicely so that Beetroot paste incorporates well with milk.

Cook further for 2-3 minutes more and PHIRNI is ready.

Immediately transfer to serving cups/bowls and refrigerate for 4-5 hours or overnight.

Garnish with dry fruits and serve.
