Aamti is a traditional Maharashtrian dish. It's very tasty and similar to dal, but made in a different way. It goes great with rice.

Add the chana dal, turmeric, and salt to a pressure cooker. Cook until the dal is soft, then grind it in a blender. Lightly sauté the onion and garlic in a pan.

Add the sautéed onion and garlic to the blender with the cumin seeds and blend again. Let it cool slightly. Heat oil in a large pan, then add chili powder. Add curry leaves, and after 1 minute, add turmeric powder, chili powder, and coriander powder.

Add the onion-garlic paste and sauté for 1 minute. Then add the dal paste, water as needed, and salt. Cook for 4-5 minutes.

Aamti is ready. Serve hot, garnished with fresh cilantro. It tastes delicious!
