Ingredients

8 servings
  • 2 cupsrolled oats
  • 1 cupall natural unsalted peanut butter
  • 1/3 cuphoney (still too sweet, though reduced from 1/2 c)
  • 1/2 cupwhey isolate protein powder
  • 1 tbspextra light olive oil
  • 1/4 tspsalt
  • Add ins:
  • 1/4 cDried blueberries
  • 1/4 cFreeze Dried strawberries or raspberries
  • 1/3 craw almonds
  • 2 tbspflax seed
  • 2 tbspchia seeds
  • 1/3 cmini chocolate chips
  • 1/3 craisins
  • 1/4 csunflower seeds
  • 1/4 cpumpkin seeds
  • 2 tbspcocoa

Steps

  1. 1

    Put peanut butter and honey in a food processor bowl. Pulse to combine with the mixing blade.

  2. 2

    Add oats and protein powder. Pulse until combined

  3. 3

    Fold in add ins as desired.

  4. 4

    Turn out into a parchment lined 8 x 8" pan. Press to form a large square.

  5. 5

    Cover and freeze for 30 min-1 hr. Defrost for 10 mins and cut into bars.

    Wrap bars in parchment paper. Store in the refrigerator until ready to use.
