Spicy Lentils with Rice

My step daughter loves cooking and she makes some delicious foods. She came across a spicy red lentil recipe once and we tried it. It was yum. I wanted to make it tonight but couldn't find the recipe. This is for Leela. I threw together spices that I thought would recreate the recipe we made together while adding in more heat and warmth that I was craving.

Spicy Lentils with Rice

Ingredients

  1. 10 ouncesdried lentils, rinsed
  2. 2 tablespoonsvegetable oil
  3. 5 cupswater
  4. 1large white onion
  5. 3 clovesgarlic, sliced
  6. 2 tablespoonscumin
  7. 2 tablespoonssmoked Spanish paprika
  8. 1 1/2 teaspoonssalt
  9. 1 teaspoonfresh ground black pepper
  10. 1 1/2 tablespoonRas el Hanout
  11. 1 1/2 teaspoontikka masala curry powder
  12. 1 teaspoongarlic powder
  13. 1 1/2 teaspoonhabanero powder
  14. 1 tablespoondried cilantro
  15. Basmati rice, cooked I used 6 cups of cooked rice
  16. 1 bunchparsley, chopped
  17. 2scallions, sliced
  18. 14.5 ouncesfire roasted tomatoes

Cooking Instructions

    Over medium heat, add oil, onions, garlic and spices. Stir and cook 3 minutes. I love the smoked spanish paprika from Penzeys spices. It's my absolute favorite one.

    Add in can of fire roasted tomatoes. Stir.

    Add water and bring to a low boil. Then add lentils.

  4. 4

    I usually start my rice after this step.

    Turn heat to low/ medium and simmer 20 minutes.

    I place my rice in a bowl and make a sort of well to place lentils in the middle.

    Place in lentils with some of the liquid from pot, sprinkle some scallions and parsley to garnish.
