Pineapple rice made with fresh pineapple cubes, 'basmati' rice, spices, herbs, it's sweet and tangy flavor and it's delicious too.

Wash rice in a bowl and keep aside, boil water, add salt 🧂, oil, lemon juice 🍋, add rinsed rice & stir once with a folk, boil on medium flame for about 7-8 mins or till grain of rice is soft when pressed, do not cover while cooking.

Strain, fluffy the boiled rice 🍚 with a folk to let out the stream, after it cools, refrigerator for 30 mins.

Slice pineapple 🍍in half, scoop out, reserving the pineapple 🐚 shell. Heat oil in a wok, add crushed garlic 🧄 and stir fry until slightly golden, add finely chopped onions 🧅, cook on low - medium flame, saute for a min.

Add red capsicum chopped and mushroom 🍄 sliced,stir - fry for 2 mins, add chopped 🍍pineapple cubes and stir- fry for 2 mins. Add raisins mix well.

Add chilled rice 🍚, soy sauce, sugar and fresh chilli, mix well, add salt🧂, basil leaves 🌱, ground black pepper and half of the peanuts, mix well.add more soy sauce if needed.

To assemble:warm pineapple 🍍 shell in an oven, fill in the rice mixture in the warmed pineapple shell 🐚. Garnish with remaining crushed peanuts, chopped tomato 🍅, chopped coriander leaves / parsley.
