Dryfruit Kachori with Spicy Stuffed Masala

In a bowl mix flour, salt and oil. Properly rub the flour well with your both hands. Add water little by little and knead the dough, the dough should be stiff. Cover and leave it to rest for half an hour.

For Dry kachori masala filling/stuffing- In a pan dry roast cumin, coriander seeds, sesame seeds and fennel seeds until aromatic. Remove and let it cool. In a bowl mix roasted seeds along with sugar, garam masala, turmeric, chilli and ginger powder.

Put in the grinder and grind until you get coarse powder. Take out in a bowl. Add Sev, nuts, raisins, remaining sesame seeds, fennel seeds and salt in the spice mixture. Mix well. Divide mixture in small lemon size balls.

Divide the dough into equal size small balls. Roll out a dough ball. Place a stuffing on it and seal the edges carefully and make round ball. Repeat this steps and shape all the kachoris in similar way.

Heat oil in a kadai. Keep the heat low, add kachoris and fry them on low heat. Or bake it by using oven or airfryer.

Serve with tamarind Chuteny.
